(who else would have taught your Dad or my Mom the same method?)  I&#039;ve played around with it from time to time, but I keep going back to hers.  I can only imagine it&#039;s because my taste&#039;s set point was established when I was a kid.  I remember my Grandmother fussing over the pan as it cooked, turning and turning it, over and over, until it was a perfect golden brown, with no black char or bloody ends.  She said soaking the chicken in water or milk with just a little salt got rid of the bloody veins near the bone.  I think she&#039;s right, I don&#039;t have a problem with then in the dark meat.  I make fried chicken mostly for the leftovers.
