Rose, oh please don’t say you want to eliminate the sour cream — although of course you can, and the cheesecake will still be lovely. You can add more sugar to the sour cream if you want it sweeter. I just love the play of those two flavors and textures against each other. Darn, I wish I had a piece right now.

i made this amazing cheesecake twice already and my husband and my son loved it!! they still finished it just in 1 day, even though my sour cream topping was tart..can i omit the sour cream?
