My current obsession is lemon and candied ginger but I&#039;m ready for more flavors.   And please include some specifics on handling the dough and getting some good rise out of them, too.  I am having trouble understanding what is meant by not handling the dough too much.  Mine have mostly spread and been too crumbly with very little rise.  There has to be some gluten developement to allow the leavening to raise them, right? How much is enough?  I can get rise from biscuits, but they aren&#039;t the same moistness as scones.
