January 27th is a very special day. It’s National Chocolate Cake Day.
And the web is awash with the most amazing chocolate cakes you’ve ever seen. Like this one. And this one, and this one.
But if you’re like me and haven’t got two hours to spare today, you might think you’re out of luck. The chocolate cake train has left the station, and you’re not on it. Again.
Been there. Done that.
So that’s why I focused over the past few seasons on developing chocolate cakes that are so easy that even a child with a short attention span (or you with little time) could make them—successfully.
Cakes that don’t require three layers and a buttercream frosting. Cakes that don’t involve beating butter with sugar and then slowly adding eggs, praying that the batter won’t curdle. Cakes so flavorful that you can eat them right out of the pan with only a dusting of powdered sugar. Or glam them up with chocolate glaze. If you want to.
And since I no longer eat an entire chocolate cake in one wanton sitting (those were the days!), I also focused on cakes that not only keep over a couple of days but actually improve in flavor and texture.
